Snack- green apple with 1 tbs. of peanut butter
Lunch- NOTHING!! I forgot my lunch at home and I needed to finish my report cards as they were due YESTERDAY! This is not recommended. I got HANGRY.
Snack-peanut butter protein balls (2)
Dinner- turkey taco meat with corn
brown ground turkey
add Lawry's taco seasoning (over the summer, I'm going to research paleo taco seasoning. Right now, I'm too damn busy to make the shit from scratch).
after the water cooks out...
add 1 can of organic pinto beans (drained)
serve on a whole wheat tortilla, or on salad, or on multi grain tortilla scoops (for the kids). I've heard that they have Ezekiel tortillas at Whole Foods. I haven't been there in a while.
I was going to put mine on a bed of spinach. Spinach was wilted.
I was then going to cook up some asparagus. It went bad.
I was going to serve it to the kids on multi grain scoops (someone ate them).
CLUSTER FUCK OF EPIC PROPORTIONS! But my ass is NOT going to the store. Adapt and overcome.
... I just heated up a can of corn and I ate mine without any "bread" or really any quality vegetable. :(
For the kids, I found a can of crescent rolls in the fridge. I cooked those up. The kids grubbed them with the taco meat.
I scrounged the cupboards because I HATE grocery shopping almost more than I hate cooking dinner and I'm trying to save $$$. I decided to cook a dinner in the crock pot tonight to save for tomorrow's dinner. Sometimes, when I cook in the crock pot during the day, my food burns before I get home. So cooking it the night before helps.
I had the ingredients to make.....
Crock Pot Peanut Butter Chicken (Thai Chicken)
This is similar to a Thai chicken. I used the following "extra" ingredients.
| onion, crushed red pepper, crushed garlic, 2 tbs honey, 1/4 cup peanut butter, 2 cans of diced tomatoes |
| Crock Pot condoms. NO GLOVE, NO LOVE!!! Seriously though, this makes crock pot cooking worthwhile. No FRICKIN mess to clean!! |
