Really did hurt my back yesterday. I've been icing, taking ibuprofen, and resting. I took a 2 hour nap today and had to force myself to wake up. I felt like I was back in college! Except I wasn't hung over.
I had to go to the school to leave half day substitute plans in my classroom. This is the single worst part of the teaching profession. Going into the classroom, typing out detailed lessons, and laying out every single piece of work the sub will need. Thankfully my friend is helping me out and she's a great teacher. I'm not leaving my darlings in the hands of a random. You have NO idea......the douchers I've had try to teach my kidlets. I had one guy play his fucking guitar all day long. He didn't do one lesson I left. The kids fucking loved him. Obvi.

I have a 9:00 appt. at the Chiropractor tomorrow morning and I'll be back at work by 11:30ish. All working out is on hold until I can figure this out. The good news is...I can sleep until 6:30 tomorrow morning. That's a huge difference between my normal 3:50 wake up call.
Matt finished the laundry and went grocery shopping for me today. I got up at 5am to search for recipes and make a grocery list. There were a few miscommunications about what was on the list...but WHATEVER. I can work with anything!
Spent almost 3 hours food prepping today. It actually felt good on my back to be on my feet. I sort of worked out some of the stiffness.

| I only add the "days" to plan out 7 meals. I usually don't stick to Monday=pizza etc. I like to be flexible and cook easy things on hard days. |
Breakfast- egg whites, spinach, onion, mushroom, jalapeno
Snack- Quest Bar
Snack-Protein shake
Dinner- brussel sprouts (I'm so full) and a delicious portabella mushroom pizza! I added chicken sausage because I need meat. I also used a tiny bit of goat cheese and a sprinkle of Parmesan.

| I also had quite a few of these. I might need to stop "tasting" so much as I'm cooking. The recipe says 25 tbs. of balsamic vinegar. I'm assuming that's a misprint. I used 1/3 of a cup. Plenty. |
